Apple Quinoa Burgers

1 celery stalk, chopped

1/2 cup quinoa

-boil together until soft and done

Sauté:

2 TBSP coconut oil

1/3 cup onion

2 carrots, chopped

2 cloves garlic

1 apple, chopped once onion is translucent

In a separate bowl mix:

3 TBSP basil

3 TBSP ground flaxseed-soaked in 3 TBSP water

1/3 cup oat flour

1 can chickpeas, mashed

1/4 tsp cumin

1/4 tsp coriander

1/4 tsp salt and pepper

pinch of cayenne 

-mix all above ingredients together, form into patty's and bake at 425° for 10 minutes, or you can sauté them in a pan. 

-top with hummus and serve with or with out a bun
