"Chocolate" Peppermint Fudge

Sweet, but healthy delicious creamy minty fudge to add to your holiday platter.  Coconut oil keeps them rich and smooth and a great source  of good fat, with a touch of mint and carob which replaces the "chocolate" making it healthier, and easier on the mineral balance within the body.  It is also lower on the GI index so it doesn't wreak havoc on blood sugar that may well be tested during this holiday treat tasting time.  

I've made them with carob and I've made them with cacao or cocoa, and I actually like the carob version better.  Without knowing what they were choosing my family chose the carob as well.

Chocolate Peppermint Fudge

1/2 cup coconut oil

1/2 cup carob powder

1/4 cup xylitol, honey, or agave

Melt all in a hot water bath, or a double broiler.  If you're good at staying RIGHT BY the stove the whole time, you can simply melt it in a pan on medium low and stir very frequently.

Add 1tsp mint at the end, as everything is melted and mixed together well.

 

Pour into glass containers ( I use 5 x 7 Pyrex containers) in which you have lined parchment paper. 

Cool in the fridge or freezer, then cut into cubes.  Keep cool, as they will melt in warmer temps.
