Fruit Tacos
I'm always looking for congestor-free pancakes and alternative options for weekend breakfasts or brunches.
I absolutely love how these fruit tacos turned out. And they don't leave you with the heavy, sick feeling in your stomach after consuming a whole plate of sugar/flour regular cakes!  Win win!
Super easy and fancy taste. 
Fruit Tacos

1 cup almond flour
2 eggs
1 teaspoon baking soda
1 teaspoon baking powder
Dash of salt
1/4 cup honey (optional)
2 Tablespoons coconut flour (they don't end up tasting like coconut)
Fry in taco shell sized rounds on a griddle at a low temp (they burn easy)  I used 250°.
Flip and fry the other side.
Place on a plate and load one side with yogurt. I used Stonybrook farms kids squeeze tube. (the pancakes are not congestor, the bit of yogurt is. Not really enough to tally it. But you can use sun butter or peanut butter if you want to avoid congestor completely)
Stuff with fruit. I used berries, bananas (again can be avoided if want it to be completely congestor free), and chopped walnuts.
Eat with a fork...it's messy! But oh so worth it!
