Greek lettuce Wrap (makes 1 wrap)

2 mushrooms

2 Tablespoons purple onion

1 Tablespoon olive oil

1/4 cup lentils

1/2 Tablespoon white wine (Hinterland La Crescent)

Cracked black pepper

Salt

Feta cheese

Parmesan-Romano

2 chopped kalamata olives

Romaine lettuce leaf

Sauté mushrooms and purple onions in olive oil. Add lentils. Then wine. Remove from heat, add cracked black pepper, salt, feta cheese, parmesan-Romano, and chopped olives. Place on romaine leaf and wrap up diaper style. You could serve with a bunch of red grapes.
