Healthy Greek Yogurt Veggie Dip

Growing up, I was never one for dips of any kind.  I ate veggies fresh from the garden or apples off of the tree, and with my immature overly aware taste buds, I never really needed anything added to the already powerful taste sensations and textures. 

Now, however, I eat the majority of my meals from vegetation, as I mention is necessary for cellular health in my book Clean Your Plate.   I wrote that book as a truth testimony to what a cellular body and bodily systems ACTUALLY and truthfully need to be healthy and in perfect function.  Enzyme rich, ph-balancing veggies are KING!

So now I try to shake up and mix and match flavors and combinations to continue exploring and enjoying my veggie combos.  I've found that now I actually appreciate dips and have created one that for whatever reason is a super combination and every time I serve it, it gets rave reviews.  Gotta love that...super simple healthy food that people crave!

 

Here it is:

1 red bell pepper, diced

1 clove garlic, minced

2 cups kale, diced into small pieces

1 teaspoon onion salt

1 8 ounces can of water chestnuts, chopped

1 cup Greek plain yogurt

1 cup healthy mayo or sour cream (optional and DOES change the health factor.)

 

Stir all together.

As it it, this recipe is 1 eliminator, and 1 congestor.  If you add the optional healthy mayo or sour cream, it becomes 2 congestors.  You ARE eating it with more Eliminators however, so it balances out nicely.  While I use only the Greek yogurt, more conventional eaters like to elevate the pizazz by adding a healthier version of mayo or sour cream.  Either way, it gets you eating more veggies, so win win!

 

Not only do I serve it with traditional carrots, cauliflower, celery, etc., but it is FANTASTIC with radishes, jicama, and fresh raw green beans!
