Italian Zucchini Boats

Simple. Fresh. Warm. Real. Comfort Food. 

Need I say more?


Italian Zucchini Boats

1 zucchini (makes 2 boats)

1/2 cup black beans

1/4 red pepper, diced

1/4 onion, diced

1/4 tomato, diced

1 Tbsp pesto

1 tsp basil

salt and pepper to taste

Cheese (optional)


Slice the zucchini in half, lengthwise, and scrape out the seeds.

Mix all of the rest of the ingredients together (except cheese) and scoop into the boats.

Yes, if you want a raw meal, you can eat it as is!

If you want a warm meal, you can top with cheddar or parmesan cheese, and broil until brown and bubbly.
