Prisoner Balls

I'm a sucker for seeing what ingredients can do for me. If you read my previous blogs I like to see what function my body needs and then match those needs to foods that serve that function then see what kind of yummy concoctions I can come up with. This particular recipe was for my desire to help my husband's body get into a state of ketosis where it is burning fat because there's no carbs left, to put it extremely basically . It's also because I wanted a super energy bar without it being a bar and taste and feel more like a treat. What resulted was a super high energy, high protein, fat bomb that tastes fantastic!

Melt:

1/2 cup coconut oil

1/2 cup agave and /or honey

1/2 cup peanut butter

Dash salt

1 teaspoon vanilla

1Tablespoon cacao or cocoa

Add:

3/4 cup almond meal

1/2 cup flax meal

1/4 cup chia

2 cups mixed of pumpkin seeds sunflower seeds coconut flakes chopped nuts raisins or dried cranberries.

Shape into balls then freeze.

Balls should be about the size of a small ping pong ball. In the meantime make the topping

3 Tablespoons coconut oil

1/4 cup sun butter

2 Tablespoons maple syrup

Melt together and pour by spoonfuls over the balls. Sprinkle tops with coarse sea salt.

Freeze and enjoy!
