Seared Basil Tuna with Corn and Tomato Salsa

Corn and Tomato Salsa:

3 tomatoes, sliced

1/4 cup corn kernels 

1/4 cup walnuts

2-4 Tablespoons butter

Slice tomatoes and lay on plate. Roast corn kernels and walnuts in butter. 

Basil Oil:

1 cup olive oil

1/2 cup basil

1 clove garlic

pinch of salt

Puree above ingredients in blender. Reserve some for tuna. Drizzle some on top of tomato, corn, nut mixture. 

Seared Basil Tuna

2 tuna fillets

salt

pepper 

ginger

1 Tablespoon butter

tarragon

marjoram

parsley

lemon

Melt butter in pan, add tarragon, marjoram, and parsley. Sear tuna in butter mixture. Then place tuna in baking dish. Top with sliced lemon and basil oil. Bake at 425° for 10-12 minutes or until done.
