Stuffed Salmon

2 salmon fillets, slice fillets horizontally

Stuffing:

Spinach

Lemon juice

Olive oil

Garlic

Pine nuts

Sea salt

Pepper

Crumbled feta 

Sauté spinach with lemon and olive oil. Add garlic, pine nuts, sea salt, pepper, and crumbled feta.

Alfredo Sauce:

1 stick butter, softened

1 cup whipping cream, room temp

3/4 cup parmesan Reggiano or 1/4 cup each: asiago, parmesan Reggiano, feta.

2 Tablespoons parsley

Mix stuffing with alfredo sauce. Stuff salmon. 

Drizzle with olive oil. Top with Pesto.
