Sun Dried Tomato Salad

Sundried Tomatoes:

Sundried tomatoes

Oregano 

Basil

Thyme

Rosemary

Olive oil

Lay sundried tomatoes on a raised cookie sheet. Sprinkle with oregano, basil, thyme, rosemary and olive oil. Broil until wrinkled. Don't over cook. Remove from oven, set aside. 

Candied Walnuts:

1/3 cup honey

Salt

Pepper

Pinch of cayenne pepper

1/2 teaspoon cinnamon

1 egg white

Walnuts

Heat oven to 300°. In a bowl mix honey, salt, pepper, cayenne, cinnamon, egg white and walnuts. Mix until walnuts are well coated. Pour onto baking sheet and bake until coating looks dry. 

Raspberry Vinaigrette Dressing:

Raspberries, smashed

Olive oil

1 Tablespoon apple cider vinegar

Honey

Mix all together.

Mix sundried tomatoes with a large container of spinach. Top with candied walnuts, raspberry dressing, and parmesan cheese.
