Sun Dried Tomato Salad

Sundried tomatoes

oregano 

basil

thyme

rosemary

olive oil

-lay sundried tomatoes on a raised cookie sheet. Sprinkle with oregano, basil, thyme, rosemary and olive oil. Broil until wrinkled. Don't over cook. Remove from oven, set aside. 

 

Candied walnuts:

1/3 cup honey

salt

pepper

pinch of cayenne pepper

1/2 tsp cinnamon

1 egg white

walnuts

-Heat oven to 300 degrees. In a bowl mix honey, salt, pepper, cayenne, cinnamon, egg white and walnuts. Mix until walnuts are well coated. Pour onto baking sheet and bake until coating looks dry. 

Raspberry Vinaigrette dressing:

raspberries, smashed

olive oil

tbsp apple cider vinegar

honey

-mix all together

Mix sundried tomatoes with a large container of spinach. Top with candied walnuts, raspberry dressing, and parmesan cheese. Enjoy.
