Sweet Potato Burritos

1 onion, chopped

1 clove garlic, chopped

olive oil

1 can kidney beans

chili powder

2 teaspoons cumin

mustard

cayenne pepper

1-2 sweet potatoes, cooked and diced

corn tortillas

cheddar cheese, grated

In a pan sauté onion and garlic in olive oil. Add kidney beans, chili powder, cumin, mustard, and cayenne pepper. Add diced sweet potato. Put mixture in corn tortillas, add cheddar cheese. Fold up and bake in 350° oven for 12 minutes.
