This is the combination using the Fresh Fridge Formulas for lunch that I came up with today.
First of all, what I love about Fresh Fridge is that it is all ready for you! The veggies and washed and cut, the beans and lentils and cooked, as are noodles, rice and quinoa.
Then, each morning before I head off, I grab a covered container and do 4 things:
1. Add my base(noodles, greens, rice, quinoa, or all of the above)
2. Add my cut up veg and greens
3. Make sure I have some protein (either in the veg, beans, lentils, quinoa, etc)
4. Add a sauce (make your own and store in the fridge for multi use, or keep it easy and buy those that you love and are healthy!)
What ended up working out today was super yummy. ( I always say that).
Some days you might say, ugh, salad for lunch again? But there really are so many different combinations it's like a new meal each time! And when you think about it, EVERY culture of food basically uses the same 20 or so ingredients and mix and match as well.
Today, it was basically making use of leftovers, so who knew what it was going to turn out like?
Today's Combo: Thai Green Curry with Vegetables and Noodles
1 cup gf noodles
1/2 c cauliflower pieces
1/2 c matchstick carrots
1/2 c red pepper
1/2 c chopped kale
I used Trader Joe's Thai Green Curry Sauce, and also a drizzle of Trader Joe's Peanut Sauce.
