Thai Green Curry Vegetables and Noodles with Peanut Sauce

Thai Green Curry with Vegetables and Noodles

1 cup gluten-free noodles

1/2 cup cauliflower pieces

1/2 cup matchstick carrots

1/2 cup red pepper

1/2 cup chopped kale

I used Trader Joe's Thai Green Curry Sauce, and also a drizzle of Trader Joe's Peanut Sauce. 

Each morning before I head off, I grab a covered container and do 4 things:

1.  Add my base(noodles, greens, rice, quinoa, or all of the above)

2.  Add my cut up veg and greens

3.  Make sure I have some protein (either in the veg, beans, lentils, quinoa, etc)

4.  Add a sauce (make your own and store in the fridge for multi use, or keep it easy and buy those that you love and are healthy!)
