Vegan Chickpea Burgers

Still looking for fantastic and fantastically tasteful protein sources that don't involve meat products. I especially wanted to incorporate choice protein sources that also included anti-inflammatory components, making these protein foods especially digestible, even for the most digestively sensitive. Not only that but in eating, in general, by very nature of digestion, causes some level of inflammation. I wanted a good protein source, but also the anti-inflammatory agents that often times comes with protein digestion. These burgers boast natural enzymes as well.

1 cup cooked chickpeas (or 1 can drained) and mashed

1 small grated zucchini

1/2 cup grated onion

2 Tablespoons sunbutter (or natural peanut butter, if you are not avoiding peanuts)

3 Tablespoons coconut vinegar (or red wine vinegar if you are not avoiding tannins)

1 teaspoon cumin

2 teaspoons turmeric

1/2 teaspoon salt

1/2 teaspoon black pepper

1 clove garlic, minced

1 cup oatmeal

1/4 cup gluten free flour

2 Tablespoons flaxseed, premixed with 1 Tablespoon of water

Simply mix all ingredients together, and fry in an air (oil free) griddle, or on a griddle lightly coated to prevent sticking. Cook on both sides.
