Wrap Station

I love wraps night! It's healthy, it's quick, it's not a lot of cleanup, it's convenience food at it's best! Plus, it's a great way to use up leftovers in the fridge.

The best part is that each "selective" eater (aka picky) gets to pick and choose how they want their meal.  It's a great way how I combine a meal perfect for my vegan eaters and my carnivores (which is not always an easy task).

The recipe is simple:

You lay out wraps (flour tortilla, gluten-free, spinach or veg wraps, flatbreads, etc.) at one end of the counter, and everything else in between.  

Some suggestions to go in your wraps (with my favorite combo at the end):

Hummus

Sprouts

Red peppers

Onions

Tomatoes

Chicken

Tilapia

Avocado

Carrot matchsticks

Zucchini shreds

Spinach cut into ribbons

Butternut squash, cubed

Brown rice

My Favorite:

Gluten-free wrap

Hummus spread on bottom

1/4 cup brown rice

Sprouts

Avocado

Red pepper

Grilled chicken if it's a meat day, or black beans if it's not

Carrot matchsticks

A drizzle of poppyseed dressing on top
